Mycotoxins are the secondary metabolites of myxomycetes, which reduce the quality of food and has toxic effects on animals and humans. In 2012, determination of mycotoxins by Enzyme-Linked Immunosorbent assay (ELISA) showed that mycotoxins contamination is lower than 50,0 %. The highest 33.3 % aflatoxin contamination of oats was detected. Determination of mycotoxins by liquid chromatography showed 50.0 % DON contamination of corn and 83.3 % - of wheat. In 2013, determination of mycotoxins by ELISA showed the highest DON contamination of cereal. 52.1 % of corn and 93.3 % of wheat were infested with DON. Determination of mycotoxins by liquid chromatography showed 77.7 % of corn and 83.3 % of wheat were infested with DON. 50.0 % ochratoxin A (OTA) contamination of barley and 50.0 % zearalenone (ZON) contamination of rye. In this study, three essential oils from different plants were used in the prevention of fungi and mycotoxins accumulation in corn. Thymus vulgaris, Syzygium aromaticum and Origanu vulgare were used in different concentrations 500, 1000 and 2000 mg/kg. Thymus vulgaris and Syzygium aromaticum essential oils showed the highest inhibitory effect on fungal contamination of corn. Thymus vulgaris and Syzygium aromaticum essential oils in concentration 2000 mg/kg showed the highest inhibitory effect on DON biosynthesis. Syzygium aromaticum and Origanu vulgare essential oils showed the highest inhibitory effect on DON biosynthesis when the concentration was 500 mg/kg.
